Cabbage, Broccoli, and Corn Salad

This is my new favorite salad.  It is beautiful to look at, delicious to eat and simple to make.

Serves: 2

Ingredients:

  • 2 cups chopped red cabbage
  • 1 cup broccoli florets
  • 1/2 cup sweet corn (frozen or fresh)

For the vinaigrette:

  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon agave syrup
  • 1/2 teaspoon paprika
  • 1/4 teaspoon of red pepper flakes
  • Salt to taste

Steps:

  1. Chop the cabbage and set it in a salad bowl.
  2. In a small pot add 1/2 cup of water, salt and broccoli. Steam the broccoli for 2-3 minutes, until the broccoli is tender but has a little bite to it.
  3. After the broccoli is steamed take the broccoli and add it to the salad bowl.  Pour out the water.
  4. In the same pan add corn, 1/2 teaspoon oil and a pinch of salt.  Cook the corn kernels for a minute.  Add the corn to the salad.
  5. To make the vinaigrette, add all the ingredients to a small bowl.  Whisk all the ingredients together to emulsify lemon juice and oil.
  6. Pour the vinaigrette over the salad.  Mix the salad well and serve.
