Cabbage, Broccoli, and Corn Salad

This is my new favorite salad. It is beautiful to look at, delicious to eat and simple to make.
Serves: 2
Ingredients:
- 2 cups chopped red cabbage
- 1 cup broccoli florets
- 1/2 cup sweet corn (frozen or fresh)
For the vinaigrette:
- 3 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon agave syrup
- 1/2 teaspoon paprika
- 1/4 teaspoon of red pepper flakes
- Salt to taste
Steps:
- Chop the cabbage and set it in a salad bowl.
- In a small pot add 1/2 cup of water, salt and broccoli. Steam the broccoli for 2-3 minutes, until the broccoli is tender but has a little bite to it.
- After the broccoli is steamed take the broccoli and add it to the salad bowl. Pour out the water.
- In the same pan add corn, 1/2 teaspoon oil and a pinch of salt. Cook the corn kernels for a minute. Add the corn to the salad.
- To make the vinaigrette, add all the ingredients to a small bowl. Whisk all the ingredients together to emulsify lemon juice and oil.
- Pour the vinaigrette over the salad. Mix the salad well and serve.
