Spicy Veggie Rice

Spicy Veggie Rice is simple to make, but still is very flavorful. This recipe is my spin on "Masale Bhat", a traditional recipe from the Indian state of Maharashtra. "Masale Bhat" literally means rice and vegetables cooked with spices. I am sure you will enjoy this recipe!

Ingredients:
- 1/2 cup white basmati rice
- 1 cup water
- 1/2 teaspoon salt
- 1 tablespoon cooking oil
- 1/2 cup cauliflower cut into big florets
- 1/4 cup carrots peeled, trimmed and cut into big chunks
- 1/4 cup green beans, cut into 1/4 to 1/2 inch pieces
- 2 tablespoons roasted chopped cashews
- 1 tablespoon SpiceMiss Garam Masala
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon turmeric powder
- 2 tablespoons chopped cilantro
Steps:
- Rinse the rice 2 to 3 times with cold water and drain. Set it aside.
- Pour the oil in the pot and let it heat for 15 to 20 seconds. The oil should be hot, but not smoking hot.
- After the oil heats up, put the turmeric powder into oil and add all the veggies in the pot.
- Next, add the rice in the pot. Toast the rice and veggies together for until rice is fragrant. The rice will be yellow in color because of the turmeric powder.
- Add cayenne pepper, salt, and garam masala powder to the rice. Combine the spices well with the rice and veggies.
- Next, add water to the pot and cover it with the lid. Let it cook until the veggies are tender and all the water has been absorbed by rice.
- Turn off the heat, and add the chopped cashews to the rice and remove the pot from the heat. Let it set for 5 minutes.
- Fluff the rice with a fork, adding and mixing the cashews into the rice.
- Garnish the rice with chopped cilantro and serve.
